Today I am going to share with you a very sumptuous and heavenly chocolate mousse. I love making this especially because it looks amazing and tastes so rich and velvety...

Ingredients:
(serves 6-8)
200g bittersweet chocolate - chopped
4 eggs, separated
100g softened unsalted butter
2 teaspoons castor sugar
Method:
1. Melt chocolate gently in a heatproof bowl over simmering water.
2. Remove from heat and then whisk in egg yolks - one at a time and then add the butter until glossy and smooth.
3. In a mix master, whip the egg whites until soft peaks form and then quickly sprinkle the castor sugar over the egg whites. Whip until satiny.
4. Fold the egg white mixture quickly into the chocolate. Place into individual glassware and chill for several hours.
5. Upon serving, allow the mousse to rest to room temperature before indulging!!!

To make love hearts - just melt a handful of white chocolate in a bowl and then place in a piping bag and pipe onto baking paper and allow to set.

Unbelievably good - I don't expect them to last long in my house!! Serve with double cream if you are going to be really cheeky...
